Cheesy Garden Casserole

Ingredients:

1 1/2 cups of mixed fresh or frozen vegetables (carrots, broccoli, green beans, zucchini, cauliflower, or whatever you have)
2 Cups cooked rice
1 jar of Rob’s Gourmet Pasta Sauce
1 1/2 cups grated/shredded cheese (your choice: cheddar, mozzarella, monterey jack, whatever you prefer)

Directions:

Lightly steam the mixed vegetables
Preheat oven to 350f degrees
Spray non-stick cooking oil lightly on a 9″ x 13″ baking dish (no need to spray if using a dish that is coated with a non-stick surface)
Line the bottom of the pan with the 2 cups of cooked rice, spreading it evenly in the pan
Layer the steamed mixed vegetables evenly on top of the rice
Coat the vegetables evenly with the jar of Rob’s Gourmet Pasta Sauce
Bake in the 350f degree oven for 25 minutes
After 25 minutes, remove from oven and spread the 1 1/2 cups of grated cheese evenly over the top
Return casserole to the oven and bake for another 5 to 10 minutes or until the cheese is melted
Remove from oven, allow to cool a few minutes before serving, and enjoy!
This is a simple and easy to make casserole. You can even substitute vegan cheese alternative to make this meal vegan and lactose-intolerant friendly! (The Daiya brand cheeses seem to melt the best and be most like real cheese).
